I can’t get VarAC to transmit and receive using SDR Console, Virtual Audio Cables or Omnirig connecting to the Hermes lite. Vara HF, I’m not sure what it is doing? Anybody ever get VarAC to work with SDR Console into Hermes? Struggling. Thanks.

Yes, I have VaraAC working very well with SDRC and Hermes Lite 2. Worked straight off. As far as I am aware there's no need to involve Omnirig at all.
See my VarAC rig config screen attached. I'm using virtual com ports 5 and 6 created in the excellent VSP Manager from K5FR. My virtual audio cables are from VAC from Eugene Muzychenko but I don't see why you should not also use VB Audio cables. All audio should be set to 48kHz sample rate.
