For radios where the driver and/or SDR-Radio Console performs the FFT, is it possible to average samples to arrive at a better sensitivity and SNR?

Better in the sense of more accurate may be possible. It will work better for some modes than others. I believe this is already done internally.

Better in the sense of higher SNR - nope. There Ain't No Such Thing As A Free Lunch.

There is averaging in the Waterfall and some clever algorithms in the spectrum.

Generally it's averaged or interpolated to a DIP (device independent pixel), so if more than one FFT bin correspond to a DIP (pixel) then what you'll see if the average.

There's also overlapping in FFT (increased resolution) which affects averaging.

SDR Console's waterfall is very good IMO, am always open to suggestions.
